Creamsicle Oreo Pudding Chip Cookies

     It’s summertime again, and that means that Oreos are featuring one of my favorite limited edition flavors: creamsicle. So how does one make a creamsicle Oreo taste even better? Put it in a pudding chip cookie!
For this recipe, I finely chopped ten creamsicle Oreos, and added them to my creamsicle pudding chip cookie dough. The white chocolate instant pudding mix, orange extract, and orange peel in the batter give this cookie the perfect base for the Oreos.

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small package instant white chocolate pudding
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • 1&1/2 teaspoon grated orange peel
  • 2 extra large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12 oz. bag white chocolate chips
  • 10 Creamsicle Oreo cookies, finely chopped
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugar, white chocolate pudding mix, vanilla extract, orange extract, and orange peel. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the white chocolate chips and chopped creamsicle oreos.
  5. Drop with a 1&1/2 Tablespoon measure onto ungreased cookie sheets. Bake for 9 minutes or until cookies are set around edges. Let cool on wire rack.
