Root Beer White Chocolate Chip Pudding Cookies
     Here is yet another variation of my mom’s pudding chip cookies. This time, I used a generous amount of root beer extract in place of the vanilla extract. I also added white chocolate chips, which gives the cookies that rich creamy taste reminiscent of vanilla ice cream. My husband was a big fan of these, and brought a few dozen to school to share with his students. He reported that although some were hesitant at first to try a root beer cookie, those that were brave enough thoroughly enjoyed the treat.

Ingredients
  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 small package instant vanilla pudding
  • 1 Tablespoon Root Beer extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups white chocolate chips
Instructions
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugars, pudding mix, and root beer extract. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the white chocolate chips.
  5. Use a 1&1/2 Tablespoon cookie scoop to measure out dough and drop onto cookie sheets. Bake for 9 minutes or until cookies are set around edges. Let cool on wire rack.
