Oatmeal Butterscotch Cookies

I found this recipe for Oatmeal Butterscotch Cookies on the package of Nestle butterscotch baking chips. My husband’s favorite kind of cookie is oatmeal, but I almost always use either milk chocolate or white chocolate chips in his cookies. This time I switched things up, and we both agreed that these cookies were just the change we desired. They were chewy, buttery, and packed just enough cinnamon to spice things up a bit.

  • ¾ cup butter, softened
  • ¾ cup white sugar
  • ¾ cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1&1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon (I used a heaping teaspoon)
  • ½ teaspoon salt
  • 3 cups rolled oats
  • 1 11 oz. package butterscotch chips
  1. Preheat oven to 375 degrees. In a large bowl, cream together the butter, white sugar, and brown sugar. Beat in eggs and vanilla.
  2. Stir in the flour, baking soda, cinnamon, and salt until blended. Add the oats and butterscotch chips, stirring until well combined.
  3. Drop by large tablespoons onto cookie sheets. Bake for 9 minutes or until golden around edges and almost set in center. Let cool on cookie sheets.
