Rainbow Kitchen Sink Cookies

Several weeks ago, I made these cookies with two beautiful little girls: my niece Natalie and my daughter Julia. Both girls love to bake when they are together, and happily stand in a chair by the counter as we measure, add, and stir ingredients into the cookie dough. Given some choices, they couldn’t quite decide what they wanted in their pudding chip cookies. The solution? Add a little bit of everything! There is Oreo instant pudding mix, miniature M&M’s, rainbow sprinkles, and marshmallow bits. The cookies were a delight to the eye and surprisingly quite pleasing to the stomach. Given the chance, we will definitely make these again. They were that good!

  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 4.2 oz. Oreo cookies and creme instant pudding mix
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12 oz. bag miniature M&M's (2 cups)
  • 1 cup rainbow sprinkles
  • 1 cup Kraft marshmallow bits
  1. Preheat oven to 375 degrees. In a stand mixer, add the butter, brown sugar, white sugar, pudding mix, and vanilla. Beat until creamy and smooth.
  2. Add the eggs and beat until fluffy.
  3. Add the flour and baking soda in several additions, beating on low speed after each addition.
  4. Add the M&M's, rainbow sprinkles, and marshmallow bits. Beat on low speed until well combined.
  5. Using a three tablespoon capacity cookie scoop, drop dough onto ungreased baking sheets. Bake for 10-11 minutes, or until edges are slightly golden and centers are almost set.

  3. The only place I have been able to consistently find them is at our local super Target. Every once in a while I see the strawberry flavored ones at Walmart.
