Banana Rice Krispie Treats

My family loves the occasional Rice Krispies treat, but eating a whole pan in a small family can get boring really fast, (especially considering their shelf life). I have three tricks to solve this issue. First, make them in a 9″x9″ pan to yield thicker bars. Second, add a small box of instant pudding mix to the bars to switch up the flavor profile. (Here I used instant banana pudding mix). Third, freeze the leftovers on day one to keep them tasting fresh. Just take them out of the freezer and let them thaw on the shelf for two hours, (or better yet, eat them frozen)!

Serves: 9
  • 3 Tablespoons butter
  • 1 10 oz. bag miniature marshmallows
  • 5 cups Rice Krispies
  • 1 small box instant banana pudding mix
  1. In a large saucepan over LOW heat, stir the butter and marshmallows together until melted and smooth.
  2. Remove from heat and immediately add the Rice Krispies and banana pudding mix. Stir well.
  3. Pour into a greased 9x9 square baking pan. Using a piece of waxed papers, press down treats into pan and make level.
