Mini Reese’s Pieces Brownies

I don’t make brownies too often, but when I do I always make sure to do two things: under-bake them a bit and make sure the butter used in the recipe has set out on the shelf all day. Just cooking them for 1 to 3 minutes less and using VERY soft (not melted) butter can take a dry cake-like  textured brownie and turn it into a moist and fudgy brownie. These were no exception, as the original brownie recipe I use calls for baking for 40 minutes and using slightly softened butter. Of course, the other thing that makes these brownies so special is the fact that instead of using nuts, I added an entire bag of miniature Reese’s Pieces. The peanut butter crunch adds the perfect touch to these moist and fudgy delights.

  • 1 cup butter, softened well
  • 2 cups white sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1&1/2 cups flour
  • ¼ cup unsweetened cocoa powder
  • dash salt
  • 1 (10 oz.) bag miniature Reese's Pieces
  1. Preheat oven to 350 degrees. In a large mixer bowl on medium speed beat butter, sugar, and vanilla until light and fluffy, scraping sides of bowl occasionally.
  2. Add the eggs and beat well.
  3. Add flour, cocoa powder, and salt. Beat just until well blended.
  4. Fold in miniature Reese's Pieces. Spread batter evenly into a greased 9"x13" baking pan. Bake for 37 minutes. Let cool on a wire rack before cutting.
