Tomato-Cucumber Salad

This is the perfect recipe for the abundance of vegetables in one’s summer garden. All you need is some tomatoes, cucumbers, half of an onion, and a flavorful herbalicious dressing. Easy to throw together, it also tastes delicious.

  • For the vegetables:
  • 5 large ripe tomatoes
  • 5 large cucumbers
  • ½ large red onion
  • pinch each of salt, pepper, and sugar

  • For the dressing:
  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  1. Core the tomatoes. Cut them in half horizontally and then slice into wedges. Cut the cucumbers in half lengthwise and then cut into ¼ inch thick half-moons. Cut the onion into thin strips.
  2. In a large bowl, combine the tomatoes, cucumbers, and onion. Sprinkle with a pinch of each: salt, pepper, and sugar.
  3. In a small bowl, whisk together the dressing ingredients. Pour over the vegetables and toss carefully.
  4. Marinate overnight in the refrigerator before serving.
