White Chocolate Cinnamon Roll Oatmeal Pudding Cookies

     To continue my experimental quest with Duncan Hines frosting creations packets, I tried out the cinnamon roll favor. Using my mom’s pudding chip cookie recipe, I replaced the vanilla extract with two cinnamon roll packets. In place of some of the flour, I added rolled oats. Toss in a bag of white chocolate chips, and you have the perfect creamy contrast to these sweet yet spicy, chewy yet soft cookies.

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small package instant french pudding mix
  • 2 packets Duncan Hines frosting creations--cinnamon roll flavor
  • 2 large eggs
  • 1&3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1&3/4 cups rolled oats
  • 2 cups white chocolate chips
  1. Preheat oven to 375 degrees. In a large bowl, cream together the butter, brown sugar, pudding mix, and frosting creations packets.
  2. Beat in the eggs.
  3. Add the flour and baking soda, stirring until well combined.
  4. Add the rolled oats, followed by the white chocolate chips, mixing until incorporated.
  5. Using a 3 Tablespoon scoop, drop dough onto ungreased cookie sheets.
  6. Bake for 10 minutes, or until edges are slightly golden and centers are almost set.
