White Chocolate Raspberry Pudding Chip Cookies

This week I have been experimenting with the different flavors of Duncan Hines frosting creations. I have yet to use the packets in a frosting jar, but I did make some cotton candy celebration fudge. For this recipe, I used my go-to pudding chip cookie dough with one tweak: I substituted the vanilla extract with two packets of the white chocolate raspberry frosting creations. The dough turned into an extravagant shade of purple (believe me, these pictures do not do the cookie hue justice). The cookies themselves had a pronounced white chocolate raspberry flavor from the packets. Add that to the instant white chocolate pudding mix and the bag of white chocolate chips, and you are in white chocolate heaven.

  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 small package instant white chocolate pudding mix
  • 2 packets Duncan Hines frosting creations--white chocolate raspberry flavor
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups white chocolate chips
  1. Preheat oven to 375 degrees. In a large bowl, cream together the butter, brown sugar, white sugar, pudding mix, and frosting creations packets.
  2. Beat in the eggs.
  3. Add the flour and baking soda, stirring until well combined.
  4. Add the white chocolate chips, mixing until incorporated.
  5. Using a 3 Tablespoon scoop, drop dough onto ungreased cookie sheets.
  6. Bake for 10 minutes, or until edges are slightly golden and centers are almost set.
