White Chocolate Mississippi Mud

Mississippi Mud is one of my all-time favorite desserts. Never switching up the recipe before, one day I realized I had no walnuts in my pantry half-way through making it. What I did have (no surprise here) is white chocolate chips. Using the chips in place of the nuts, the brownies turned out with a deep richness from the cocoa contrasted with the sweet lightness of white chocolate. The chips do not melt in the brownie either, so there is still a slight crunch that serves well in place of the walnut texture. Combined with the mellow oozy fluffiness of marshmallow creme, and you have a winner of a dessert.

  • Base Layer:
  • 4 large eggs
  • 1 cup butter, softened
  • 2 cups white sugar
  • 1 teaspoon vanilla extract
  • 1&1/2 cups flour
  • ¼ cup unsweetened cocoa powder
  • dash salt
  • 1 cup white chocolate chips
  • -------
  • Middle Layer:
  • 7 oz. jar marshmallow creme
  • -------
  • Top Layer:
  • ⅓ cup butter
  • ½ cup unsweetened cocoa powder
  • ⅓ cup milk
  • 1 teaspoon vanilla
  • 4 cups powdered sugar
  1. Preheat oven to 350 degrees. In a large mixer bowl on medium speed, beat eggs, butter, sugar, and vanilla until light and fluffy, scraping sides of bowl occasionally.
  2. Add flour, cocoa powder, and salt. Beat just until well blended.
  3. Fold in white chocolate chips. Spread batter evenly into a greased 9"x13" baking pan. Bake for 40 minutes.
  4. Immediately spread dollops of marshmallow creme over the base layer. Spread until smooth and even. Let cool on a wire rack for at least one hour before frosting.
  5. To frost, in a medium saucepan melt butter. Stir in cocoa powder and cook one minute, stirring constantly. Remove from heat. Add milk, vanilla, and powdered sugar; stir until very smooth. Spread on top of marshmallow layer.
  6. When frosting has set, cut into squares.
