York Peppermint Patty Stuffed Brownies

     I made these brownies when my brother and his family were in town visiting from Ohio. My nephew Zach LOVES brownies, and after finishing off a whole frosted pan with his brothers, I decided to make something different. I have seen some York peppermint patty stuffed brownies floating around the net, but I did not want to stray from my favorite brownie recipe. I simply poured half of the batter from my favorite recipe into the bottom of the cake pan, topped the base layer with meticulous rows of York patties, and smoothed the rest of the brownie batter over top.
These brownies taste great warm out of the oven, but they are much easier to cut into if you wait a couple of hours for them to cool first. The creamy peppermint centers make frosting unnecessary, although I’m sure it wouldn’t hurt if you are a frosting aficionado like myself
York Peppermint Patty Stuffed Brownies

  • 1 cup butter, softened
  • 2 cups white sugar
  • 4 large eggs
  • 1 Tablespoon pure vanilla extract
  • 1&1/2 cups flour
  • ¼ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • 1 large bag York Peppermint Patties (about 35)
  1. Preheat oven to 350 degrees. Unwrap the York Peppermint Patties and set aside for later.
  2. In a large mixer bowl on medium speed cream together: butter, sugar, and vanilla until light and fluffy, scraping sides of bowl occasionally.
  3. Add eggs and beat well.
  4. Add flour, cocoa powder, and salt. Beat just until well blended.
  5. Spread half of batter into greased 9x13 inch cake pan. Layer the top with the York Peppermint Patties in rows of 5. Spread remaining batter evenly over top of patties.
  6. Bake for 35 minutes or until edges are brown.
