Vanilla Bean Almond Squares

Almond Squares are one of my very favorite recipes. They are super quick to prepare and they taste delicious. I made these a few weeks ago, but I added a special ingredient which took these squares to a whole new level: scraped vanilla beans. The extra kick from the tiny specks of vanilla melds wonderfully with the full-on flavor of almond permeating these bars. I like to top them generously with powdered sugar; no frosting is necessary for this sweet dessert. They can be eaten warm or at room temperature. (In fact, I have been known to eat them straight from the freezer)!

Serves: 12-16
  • 1 cup butter, melted and cooled
  • 2 cups white sugar
  • 4 large eggs
  • 2 teaspoons pure almond extract
  • 2 vanilla beans, scraped
  • 2 cups all-purpose flour
  1. Preheat oven to 350 degrees. Spray a 9x13" cake pan with non-stick cooking spray.
  2. In a large bowl, beat together the butter and sugar. Add the eggs, almond extract, and vanilla bean seeds and beat well.
  3. Beat in the flour just until combined.
  4. Pour into prepared pan. Bake for 30-35 minutes or until toothpick inserted near center comes out clean. Cool and cut into squares.
Store between layers of waxed paper in an airtight container. Also freezes very well.
