Pistachio Milk Chocolate Pudding Chip Cookies
     Continuing on the pudding chip theme this week, I have chocolate chip cookies made with a package of instant pistachio pudding mix. One may think that pistachio and milk chocolate are an awkward combination, but one taste of these cookies took away my skepticism. They are, in fact, a wonderful compliment to each other. And the pistachio flavor is mild (present but not overwhelming), which is perfect for both pistachio fans and antagonists.

  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 small package instant pistachio pudding mix
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups milk chocolate chips
  1. Preheat oven to 375 degrees. In a large bowl, cream together the butter, brown sugar, white sugar, pudding mix, vanilla extract, and almond extract.
  2. Beat in the eggs.
  3. Add the flour and baking soda, stirring until well combined.
  4. Add the milk chocolate chips, mixing until incorporated.
  5. Using a 3 Tablespoon scoop, drop dough onto ungreased cookie sheets.
  6. Bake for 10 minutes, or until edges are slightly golden and centers are almost set.
