Pumpkin Date White Chocolate Pudding Chip Cookies

Today I am posting a new recipe I invented over the summer…I’ve been waiting for Halloween to share it with you though. I took my favorite pudding chip cookie recipe and substituted pumpkin puree for part of the butter. I also used white chocolate pudding mix, white chocolate chips, and dates.
These cookies are perfect for any time of year, but especially autumn. They have a festive pumpkin taste and deep orange hue. They are also SUPER soft, almost like eating a piece of cake. The chopped dates pleasantly accompany the pumpkin and white chocolate flavors in this cookie.

  • 6 Tablespoons butter, softened
  • 1 cup dark brown sugar, packed
  • 1 small package instant white chocolate pudding
  • 1&1/2 teaspoons vanilla extract
  • ½ cup + 2 Tablespoons pumpkin puree
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12 oz. bag white chocolate chips
  • 1 cup chopped dates
  1. Preheat oven to 350 degrees. In a large bowl, mix together butter, sugar, pudding mix, and vanilla. Stir well.
  2. Add the pumpkin puree and beat well.
  3. Add the eggs and stir well.
  4. Mix in the flour and baking soda.
  5. Fold in the white chocolate chips and dates.
  6. Using a 1&1/2 Tablespoon cookie scoop, drop onto ungreased cookie sheets. Bake for 9 minutes or until cookies are set around edges. Let cool on wire rack.
