Double Oat White Chocolate Date Pudding Cookies

My husband’s favorite kind of cookie is oatmeal, and my favorite kind is white chocolate chip. We both love dates equally as much. A few weeks back I was deciding what kind of pudding cookie to make, and I decided to put in the best of both worlds. This pudding cookie is chock-full of rolled oats, white chocolate chips, and chopped dates. All three additions compliment each other in both the flavor and texture realms. And because they are pudding cookies, they still have that unique softness which make them my family’s favorite.

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small package instant french vanilla pudding
  • 1 Tablespoon pure vanilla extract
  • 2 extra large eggs
  • 1&1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3 cups rolled oats
  • 2 cups white chocolate chips
  • 1 8 oz. package chopped dates (1 cup)
  1. Preheat oven to 375 degrees. In a stand mixer, beat together the butter, brown sugar, pudding mix, and vanilla, until fluffy.
  2. Add the eggs and beat well.
  3. Add the flour and baking soda, mixing on low speed until combined.
  4. Add the white chocolate chips and dates, beating until combined.
  5. Drop dough with a 1&1/2 Tablespoon scoop onto ungreased cookie sheets. Bake for 9 minutes or until edges are golden and centers are slightly moist.
