Reese’s Pieces Oatmeal Cookies

This is a great oatmeal cookie recipe that you can use leftover Halloween candy with. I used Reese’s Pieces, but pretty much any chopped candy bar will do. If you prefer your cookies with a little more zip, toss in an extra 1/4 teaspoon cinnamon. If you prefer your cookies milder, then you can omit the cinnamon altogether.

  • ½ cup butter, softened
  • ¾ cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ½ cup + 2 Tbsp. all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1&1/2 cups rolled oats
  • 1 10 oz. bag mini Reese's Pieces (1&1/3 cups)
  1. Preheat oven to 375 degrees. In a large bowl, cream together the butter, brown sugar, and vanilla. Beat in the egg.
  2. Stir in the flour, baking soda, salt, and cinnamon until well combined. Add the oats and stir. Mix in the Reese's Pieces.
  3. Drop with a 1&1/2 Tablespoon scoop onto cookie sheets. Bake for 9 minutes or until done.
