White Chocolate Cotton Candy Celebration Pudding Cookies

People who know me also know that my favorite kind of cookie ever are pudding chip cookies. I love to switch around the type of pudding mix, the extracts, the type of chips and add-ins, even the kind of sugar in the recipe.
For this batch, I used white chocolate pudding mix, two packets of Duncan Hines frosting creations, white chocolate chips, and rainbow sprinkles. The Duncan Hines packets were the cotton candy flavor and a brilliant blue color, which resulted in very sweet and pretty blue cookies. I brought these to a church dinner, and they went over very well with kids and adults alike.

  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 small package instant white chocolate pudding mix
  • 2 packets Duncan Hines frosting creations--cotton candy flavor
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups white chocolate chips
  • 1 cup rainbow sprinkles
  1. Preheat oven to 375 degrees. In a large bowl, cream together the butter, brown sugar, white sugar, pudding mix, and frosting creations packets.
  2. Beat in the eggs.
  3. Add the flour and baking soda, stirring until well combined.
  4. Add the white chocolate chips and sprinkles, mixing until incorporated.
  5. Using a 1&1/2 Tablespoon scoop, drop dough onto ungreased cookie sheets.
  6. Bake for 9 minutes, or until edges are slightly golden and centers are almost set.
