Payday Bars

When I saw these homemade Payday bars on Kathie Cooks, I knew immediately that I had to make them. You see, Paydays are my husband’s favorite candy bars, and for some reason they have been scarce at our local grocery stores since Halloween. This recipe has solved our dilemma. It tastes VERY similar to what you can buy at the store.
I kept Kathie’s recipe the same the first time I made these. The second time (yes, I have already made them twice), I sprinkled about 1/4 teaspoon of coarse sea salt on top before adding the second half of the nuts. Just that extra bit of saltiness really pushed these bars over the top. Personally, I think these homemade treat are even better than what you can buy at the store!

  • 1 1lb. jar dry roasted salted peanuts
  • 3 Tablespoons butter
  • 1 10 oz. bag Reese's peanut butter chips (1&2/3 cups)
  • 1 12 oz. can sweetened condensed milk
  • 2 cups miniature marshmallows
  • *1/4 teaspoon coarse sea salt, if desired
  1. Line a 9x13 inch cake pan with aluminum foil. Spray with nonstick cooking spray. Spread out half of the peanuts on the bottom of the prepared pan.
  2. In a medium saucepan over low heat, melt the butter. Add the peanut butter chips and sweetened condensed milk, stirring until smooth.
  3. Add the miniature marshmallows, stirring constantly over medium-low heat until melted.
  4. Pour mixture over peanuts in pan. If desired, sprinkle with coarse sea salt. Top with the remaining half of the peanuts and press down with hands.
  5. Refrigerate until firm. Cut into bars.
