In honor of Valentine’s Day, I have some very festive pudding cookies to share. They use the basic pudding chip cookie recipe as a backdrop, except cherry extract is substituted for the vanilla and several squeezes of red food coloring gel are added. Milk chocolate chips accent these pretty treats, reminding one of chocolate covered cherries in a cookie form.
Cherry Vanilla Chocolate Chip Pudding Cookies
1 cup butter, softened
3/4 cup light brown sugar, packed
1/4 cup white sugar
1 small package instant vanilla pudding mix
1 teaspoon cherry extract
several squeezes red food coloring gel
2 large eggs
2&1/4 cups all-purpose flour
1 teaspoon baking soda
2 cups milk chocolate chips
1. Preheat oven to 375 degrees. In a large bowl, cream together the butter, brown sugar, white sugar, pudding mix, cherry extract, and red food coloring gel.
2. Beat in the eggs.
3. Add the flour and baking soda, stirring until well combined.
4. Add the milk chocolate chips, mixing until incorporated.
5. Using a 1&1/2 Tablespoon scoop, drop dough onto ungreased cookie sheets.
6. Bake for 8-9 minutes, or until edges are slightly golden and centers are almost set.
Makes 44 medium-sized cookies
