Mega Stuf Oreo Pudding Cookies

Have you seen the new limited edition Oreos out? They are Mega Stuf Oreos, (as in mega filling for those lovers of sweet sugary Oreo centers). The package only sat in my pantry for two days before I decided to bake with them. I made my favorite pudding chip cookie recipe, doubling all ingredients. Chocolate pudding mix and white chocolate pudding mix, along with vanilla and almond extracts, serve as a complementary backdrop to these cookies. White chocolate chips stud the batter, with the coarsely chopped Mega Stuf Oreos throughout. You may be wondering what happened to that rich white filling: it baked itself into the batter. This means that every bite of the cookie has that unique and sweet Oreo filling taste. Delish!

Mega Stuf Oreo Pudding Cookies
Serves: 9 dozen
Ingredients
  • 2 cups salted butter, softened (4 sticks)
  • 1&1/2 cups light brown sugar, packed
  • ½ cup granulated sugar
  • 1 (3.4 oz) package instant chocolate pudding mix
  • 1 (3.4 oz) package instant white chocolate pudding mix
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure almond extract
  • 4 large eggs
  • 2 teaspoons baking soda
  • 4&1/2 cups all-purpose flour
  • 2 (12 oz) bags white chocolate chips (4 cups)
  • 1 (13.2 oz) package Mega Oreos, coarsely chopped
Instructions
  1. Preheat oven to 375 degrees. In a large stand mixer, add the butter, brown sugar, granulated sugar, instant chocolate and white chocolate pudding mixes, and vanilla and almond extracts. Beat on low speed until creamed together.
  2. Add the eggs and beat on medium speed until light and fluffy.
  3. Add the baking soda, followed by the flour in several additions. Beat on low speed until flour disappears and is combined.
  4. On low speed, beat in the white chocolate chips, followed by the coarsely chopped Mega Oreo cookies.
  5. Using a 1&1/2 Tablespoon scoop, drop dough onto ungreased cookie sheets. Bake for 9 minutes or until edges are set and centers are still slightly moist.

    • Those mega stuffed cookies are dangerously yummy! These mega stuffed pudding cookies take on that taste with that extra touch of white chocolate….I froze the whole batch but keep finding myself reaching into the freezer for one. 🙂
