Big Batch M&M Fudgy Brownies


If you like fudgy and moist brownies, then this recipe is for you. It makes a HUGE half sheet pan, and best of all, can be whipped up in just one large bowl. This is one of those recipes that I made up by accident…Originally I intended on baking a batch of one of my favorite brownie recipes, but realized too late that I did not have enough cocoa powder in the pantry. However, I always have plenty of chocolate chips and used one cup of those melted in place of the cocoa powder. This resulted in ridiculously moist and rich brownies. These brownies are so moist that it’s amazing that they hold their shape well and rich to the point of absolute divinity. ๐Ÿ™‚

  • 3 sticks butter, melted
  • 3 cups white sugar
  • 6 large eggs
  • 1 Tablespoon vanilla extract
  • 1&1/2 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup semi-sweet chocolate chips, melted
  • 1 12 oz. bag plain M&M's
  • ⅓ cup confectioner's sugar, for dusting
  1. Preheat oven to 350 degrees. Line a half sheet pan with aluminum foil. Spray with nonstick cooking spray. Set aside.
  2. In a large mixing bowl, melt the butter in the microwave. Add the sugar, eggs, and vanilla. *Beat well with a wire whisk. Mixture should be smooth.
  3. Add the flour, cocoa powder, salt, and baking powder. Whisk until well combined.
  4. Stir in the melted chocolate chips. Pour into prepared baking pan. Sprinkle top with the M&M's.
  5. Bake for 25-28 minutes. Let cool on a wire rack before dusting with confectioner's sugar. Cut into pieces.
*It is important to use a whisk, not a stand mixer. A stand mixer will beat too much air into the brownies and make them more cake-like than fudgy.
