Sunshine Breakfast Pudding Cookies


I made up these cookies last week, and they are just full of unique and delicious ingredients. Instant white chocolate pudding mix makes them extra soft. Orange flavored Duncan Hines frosting creations packets give a pleasant citrus boost. Rolled oats and chopped dates add some pleasant body and texture. Plenty of creamy white chocolate chips add the perfect touch of richness. They are the perfect cookie for an afternoon snack or even breakfast (hence the name).

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small package (3.4 oz.) instant white chocolate pudding mix
  • 2 packets Duncan Hines Frosting Creations, orange creme flavor
  • 1 teaspoon vanilla bean paste
  • 2 extra large eggs
  • 1 teaspoon baking soda
  • 1&3/4 cups all-purpose flour
  • 2 cups rolled oats
  • 8 oz. (1 cup) chopped dates
  • 12 oz. (2 cups) white chocolate chips
  1. Preheat oven to 375 degrees. In a stand mixer, cream together the softened butter, brown sugar, instant white chocolate pudding mix, orange creme frosting creations packets, and vanilla bean paste. Mix on low speed until smooth.
  2. Add the eggs and mix on medium speed until light and fluffy.
  3. Add the baking soda, followed by the flour, in several additions. Mix on low speed until incorporated.
  4. Add the oatmeal, mixing until combined. Follow with the dates and white chocolate chips, mixing on low speed until just combined.
  5. Drop dough with a 1&1/2 Tablespoon scoop onto ungreased cookie sheets. Bake for 9 minutes or until edges are very lightly goldena and centers are almost set but slightly moist.
