ULTIMATE Payday Bars


Of all the sweets and treats I have made this year, payday bars have frequented our kitchen more than any other. When I make a batch, I usually send half of it to my mom and dad’s house (one batch makes plenty). Because I have made these bars over half a dozen times, I have had the chance to experiment with different ratios of the ingredients. This recipe is the best of the best. It has loads of peanuts (twice as many as my original recipe), fragrant vanilla beans, and extra sea salt to accent the sweetness of the peanut buttery filling. My family and I have tried these side by side with the original Payday candy bars, and I promise you-these taste even better. ๐Ÿ™‚

  • 2 (1 1lb). jars dry roasted salted peanuts
  • 3 Tablespoons butter
  • 1 10 oz. bag Reese's peanut butter chips (1&2/3 cups)
  • 1 12 oz. can sweetened condensed milk
  • 2 cups miniature marshmallows
  • 2 vanilla beans, scraped
  • ½ teaspoon coarse sea salt
  1. Line a 9x13 inch cake pan with aluminum foil. Spray with nonstick cooking spray. Spread out one jar of peanuts on the bottom of the prepared pan.
  2. In a medium saucepan over low heat, melt the butter. Add the peanut butter chips and sweetened condensed milk, stirring until smooth.
  3. Add the miniature marshmallows and vanilla beans, stirring constantly over medium-low heat until melted.
  4. Pour mixture over peanuts in pan. Sprinkle top with coarse sea salt. Top with the remaining jar of peanuts and press down with hands.
  5. Refrigerate until firm. Cut into bars. Store between layers of waxed paper and keep chilled for best consistency.
