White Chocolate Strawberry Funfetti Cake Bars



These white chocolate strawberry funfetti cake bars are an original recipe that I toyed around with last week. Using my almond squares as a springboard, I doubled the ingredients and added three things: Duncan Hines frosting creations packets (strawberry shortcake flavor), plenty of  rainbow sprinkles, and a bag of white chocolate chips. The recipe turned out exactly as expected: very sweet with a subtle strawberry flavor and a dominant funfetti appearance. My husband took most of these to work and shared them with his high school algebra students (they were a hit). If you would like a smaller yield, simply cut the ingredient ratio in half and bake in a 9″ x 13″ pan for a few less minutes. 🙂

  • 2 cups butter, melted
  • 4 cups white sugar
  • 4 packets Duncan Hines frosting creations - cstrawberry shortcake flavor
  • 8 large eggs
  • 4 cups all-purpose flour
  • 1 cup rainbow sprinkles
  • 12 oz. bag Ghiradelli white chocolate chips
  1. Preheat oven to 350 degrees. Line an 18" x 12" sheet pan with parchment paper. Spray with nonstick cooking spray.
  2. In a large bowl, combine the melted butter, sugar, and frosting creations packets. Beat with a whisk until well combined.
  3. Add the eggs, whisking until smooth and fluffy.
  4. Add the flour and and whisk, just until combined. Stir in the sprinkles.
  5. Pour into prepared sheet pan. Sprinkle top evenly with white chocolate chips.
  6. Bake for 35 minutes, until toothpick inserted near center comes out with just a few crumbs attached.
  7. Cool on wire rack for two hours. Remove bars from pan by lifting up sides of parchment paper. Cut into rows of 8 by 6.
