Mint Chocolate Fudge M&M Oatmeal Pudding Cookies


Mint Chocolate Fudge M&M Oatmeal Pudding Cookies are an original creation. I developed them for my husband to give his mathematics students during their state tests. There are two unique ingredients inside the dough: pure mint extract and a mint chocolate frosting creations packet. (Some studies have shown that mint can help students focus and perform better on exams, hence the addition). The mint flavorings accent the chocolate fudge pudding in the cookies quite well. The rolled oats add a pleasant chew, while the M&M’s contribute a sweet crunch to these yummy treats.

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small pkg. instant chocolate fudge pudding mix
  • 1 Duncan Hines frosting creations packet - mint chocolate flavor
  • ¾ teaspoon pure mint extract
  • 2 extra large eggs
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 2 cups rolled oats
  • 2 cups miniature M&M's
  1. In a stand mixer, add the butter, brown sugar, instant pudding mix, frosting creations packet, and mint extract. Beat on low and then medium speed until smooth.
  2. Add the eggs and mix on medium until smooth and fluffy.
  3. Add the baking soda and flour in two additions, beating on low speed after each addition.
  4. Add the rolled oats and M&M's, beating on low speed until incorporated.
  5. Using a 1&1/2 tablespoon cookie scoop, drop dough by mounds onto ungreased baking sheets. Bake for 9 minutes or until edges are set and centers are still slightly moist. Let cool on sheets for several minutes before removing to wire racks to cool completely.
