M&M Cookie Dough Brownies

I was so incredibly pleased with my cookie dough truffle brownies, that I decided to expand upon my original idea. I added a heaping cup of miniature M&M’s to the cookie dough topping. The chocolate candies gave a pleasant crunch to the dessert as well as extra sweetness. The brownies were just as moist and soft as ever, and the perfect foundation for a unique indulgence.

Ingredients
  • BROWNIE BASE:
  • 1 cup butter, melted
  • 2 cups white sugar
  • 4 large eggs
  • 1 Tablespoon vanilla bean paste
  • ⅔ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ------------
  • COOKIE DOUGH TOPPING:
  • ½ cup butter, softened
  • ¾ cup light brown sugar, firmly packed
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 14 oz. can sweetened condensed milk
  • 1 heaping cup miniature M&M's
Instructions
  1. First make the brownie base: Preheat oven to 350 degrees. Spray a 9x13 inch cake pan with nonstick cooking spray.
  2. In a large bowl, whisk together the butter, sugar, eggs, and vanilla until smooth and fluffy.
  3. Add the cocoa powder, flour, salt, and baking powder, whisking until smooth.
  4. Pour into prepared pan. Bake for 25 minutes. (Edges should be firm-do not overbake).
  5. Make the cookie dough topping: In a large bowl, cream together the butter, brown sugar, and vanilla. Stir in flour and sweetened condensed milk until smooth. Add M&M's and stir until combined.
  6. Spread cookie dough topping on top of warm brownies. Pat down with hands evenly. Cool before cutting.
Notes
Keep refrigerated for best results.
