Slow Cooker Vegetable Beef Chili


This chili is a play on one of my favorites: hearty & healthy turkey chili. Other than adding extra peppers and using some different beans, the base is basically the same. Ground beef is featured this time around in lieu of the ground turkey. (Both meats are easily interchangeable for this recipe).

Serves: 8-12
  • 1 lb. ground beef, prepared (browned, rinsed, & drained)
  • 1 large vidalia onion, chopped
  • 2 large red peppers, seeded & chopped
  • 1 (15.5 oz.) can black beans, drained
  • 1 (15.5 oz.) can small red beans, drained
  • 1 (15.5 oz.) can small white beans, drained
  • 1 (24 oz.) jar Ragu (roasted red peppers & onion flavor)
  • 2 (10 oz.) cans Rotel (mild-diced tomatoes & green chiles flavor)
  • 1 (14.5 oz.) can diced tomatoes (basil, garlic, & oregano flavor)
  • 1 (7 oz.) can diced green chiles
  • 2 (15 oz.) cans whole kernel sweet corn (do not drain)
  • 1 Tablespoon white sugar
  • 2 Tablespoons Mexican chili powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon garlic powder
  1. In a large slow cooker, add all ingredients and stir to combine.
  2. Cook on HIGH heat for 4 hours or LOW heat for 7 hours.
