White Chocolate Semi-Sweet Pudding Cookies

        These cookies are based on my mom’s pudding chip cookies. The only thing I changed was the kind of instant pudding in the dough; I used white chocolate in lieu of the french vanilla. Surprisingly, the switch doesn’t make a whole lot of difference in taste. The hue of the cookies bakes up much lighter though.

  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 small package instant white chocolate pudding
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12 oz. bag semi-sweet chocolate chips
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugars, pudding mix, and vanilla. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the chocolate chips.
  5. Drop by large spoonfuls onto cookie sheets. Bake for 10-11 minutes or until cookies are set around edges. Let cool on wire rack.
