Antioxidant Oatmeal


I like oatmeal, but much more when it is jazzed up with fresh fruit and vanilla. I call this “antioxidant oatmeal” because it is full of antioxidants from the almond milk, blueberries, vanilla beans., and rolled oats. This makes a wonderful warm breakfast or afternoon snack, and you can adjust the amount of blueberries to your own liking.

Serves: 1
  • 1 cup vanilla almond milk
  • dash of salt (I used "No Salt")
  • ½ cup old fashioned rolled oats
  • ½ cup blueberries
  • ⅛ teaspoon vanilla bean paste
  1. In a small saucepan, bring the almond milk and salt to a boil over medium heat.
  2. Add the rolled oats, and reduce heat to medium low. Stir frequently for 5 minutes, or until liquid is reduced to desired consistency.
  3. Remove from heat and add blueberries and vanilla bean paste. Stir. Transfer to bowl and let cool slightly before enjoying.
