Banana Caramel Chocolate Chip Pecan Oatmeal Pudding Cookies


I haven’t posted a pudding chip cookie recipe in a while, and this one fits the bill for a yummy breakfast or after school snack. It has a double wallop of flavor, both from the instant banana pudding mix and the caramel frosting creations pecans. Toss in some smoothly rich milk chocolate chips, chewy rolled oats, and crunchy pecans, and you have yourself a versatile cookie with lots of added protein and deliciousness.

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small pkg. instant banana cream pudding mix
  • 2  Duncan Hines frosting creations packets - caramel flavor
  • 2 extra large eggs
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 2 cups rolled oats
  • 2 cups milk chocolate chips
  • 1 cup chopped pecans
  1. Preheat oven to 375 degrees. In a stand mixer, add the butter, brown sugar, banana pudding mix, and frosting creations packets. Beat on medium speed until smooth.
  2. Add the eggs and beat on medium until smooth and fluffy, scraping down sides of bowl as necessary.
  3. Add the baking soda and flour in two additions, beating on low speed after each addition.
  4. Add the rolled oats and beat on low speed until incorporated.
  5. Add the milk chocolate chips and pecans, beating on low speed until incorporated.
  6. using a 1&1/2 Tablespoon cookie scoop, drop dough onto ungreased baking sheets. Bake for 9-10 minutes.
