Mandarin Orange Cake with Pineapple Fluffy Frosting


You may have seen mandarin orange cakes made with yellow cake mix before, but I made this one with an orange cake mix. I kept things light by using two egg whites in place of an egg, and applesauce in lieu of oil or butter. This mandarin orange cake was the featured dessert at my mom’s Labor Day barbecue. Everyone raved about how moist, fluffy, and orangey it was, and they were surprised to learn that it was a lightened calorie option. One twelfth of the entire cake (included the fluffy pineapple frosting) is only 317 calories. You would never know it though, because it is extremely satisfying and delicious.

  • For the Mandarin Orange Cake:
  • 1 (16.5 oz.) pkg. Duncan Hines Orange Supreme cake mix
  • 1 (11 oz.) can Dole Mandarin oranges, with syrup
  • ½ cup unsweetened applesauce
  • 1 extra large egg
  • 2 egg whites
  • --------------------
  • For the Pineapple Fluff Frosting:
  • 1 (20 oz.) can Dole crushed pineapple, with syrup (chilled)
  • 1 (3.4 oz.) box jello instant vanilla pudding mix
  • 1 (8 oz.) container cool whip, thawed
  1. First make the cake. Preheat the oven to 350 degrees. Spray a 9x13 inch cake pan with cooking spray. Set aside.
  2. In a large stand mixer, add the orange cake mix, mandarin oranges with syrup, applesauce, egg, and egg whites. Beat on medium speed for 2 minutes.
  3. Pour cake batter into prepared pan. Bake for 25-30 minutes, or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  4. To make frosting, stir together the chilled crushed pineapple (with syrup) and vanilla pudding mix. Fold in the cool whip. Spread on cooled cake.
Cake must be refrigerated.
