Chipotle Shrimp & Mushroom Alfredo


Are you like me and usually keep at least one block of cream cheese on hand in the refrigerator? The only problem I ever seem to have is realizing that the expiration date is close by, with no specific recipe to use it with. The Philadelphia website from Kraft is a great resource for finding a variety of appetizers, main courses, and desserts using the cream cheese. I found a tasty looking recipe on my first search of the site, and altered it just a bit. (I used the entire block of cream cheese, rigatoni in place of the linguini, and a whole package of mushrooms which I sauteed). Personally, I feel that there could have been plenty more chipotle peppers in the sauce, and next time I will at least double the amount. Otherwise, the pasta turned out creamy and rich, with a touch of spiciness.

Chipotle Shrimp & Mushroom Alfredo

  • 12 oz. rigatoni pasta
  • 12 oz. white mushrooms, sliced
  • 8 Tbsp. butter, divided
  • 12 oz. pre-cooked large medium, tails removed
  • 8 oz. PHILADELPHIA Cream Cheese, cubed
  • 1 cup whole milk
  • ¾ cup grated Parmesan & Romano cheese blend
  • 2 Tbsp. canned chipotle peppers in adobo sauce, finely chopped
  1. Boil rigatoni pasta for 13 minutes, omitting salt. Drain in colander and set aside.
  2. In a large skillet, melt 2 Tablespoons of the butter over medium-low heat. Saute mushrooms for several minutes until cooked, stirring frequently. Move mushrooms to a bowl and set aside.
  3. Using the same large skillet, melt 2 more Tablespoons of butter on medium heat. Add shrimp; cook and stir about 5 minutes until shrimp are shrunken and ready. Remove shrimp and leftover butter from skillet; set aside in a bowl.
  4. Add the cubed cream cheese, milk, grated cheese, chipotle peppers, and remaining butter to skillet. Cook on low heat for 5 minutes, stirring constantly with a whisk, until cream cheese is completely melted and mixture is well blended. Stir in shrimp and mushrooms.
  5. Add the pasta to a large bowl. Add the mushroom and shrimp sauce; mix lightly.
