Sausage Noodle Soup

I threw this sausage noodle soup together on a whim a couple of months ago. It has beef broth, chicken broth, vidalia onion, egg noodles, kielbasa sausage, and spinach inside. For a basic soup, it is very hearty and quite tasty. My husband loved it, although next time I will use fresh spinach instead of the canned for a fresher appearance. You can also sprinkle the top of your bowl with parmesan cheese for an extra salty, creamy kick.

Serves: 6-12
Ingredients
  • 4 cups beef broth
  • 8 cups chicken broth
  • ½ vidalia onion, chopped
  • 6 oz. egg noodles
  • 14 oz. kielbasa sausage, fully cooked & diced
  • 14 oz. can spinach, drained
  • *grated parmesan cheese, for topping
Instructions
  1. In a large saucepan, bring the beef broth, chicken broth, and onions to a boil over high heat.
  2. Add the egg noodles, and boil, stirring occasionally, for 9 minutes.
  3. During the last minute of boiling time, add the diced sausage and spinach. Stir.
  4. Serve topped with grated parmesan cheese.
