Penuche White Chocolate Oatmeal Flax Pudding Cookies


If you like white chocolate, you will LOVE these penuche white chocolate flax pudding cookies. I used TWO bags of white chocolate chips in the cookie dough, along with instant white chocolate pudding mix. The “penuche” stems from the all dark brown sugar used as a sweetener. Ground flax seed and rolled oats round out the great texture and flavor in these delicious cookies.

  • 1 cup butter, softened
  • 1 cup packed dark brown sugar
  • 1 3.4 oz. package white chocolate instant pudding mix
  • 1 vanilla bean, scraped
  • 2 large eggs
  • 1 cup all-purpose flour
  • ½ cup ground flax
  • 1 teaspoon baking soda
  • 3 cups rolled oats
  • 2 12 oz. bags white chocolate chips (4 cups)
  1. Preheat oven to 375 degrees. In a large bowl, cream together the butter, brown sugar, pudding mix, and vanilla beans.
  2. Beat in the eggs.
  3. Slowly add the flour, flax, and baking soda, stirring until well combined.
  4. Stir in the oats, followed by the white chocolate chips. Mix until incorporated.
  5. Using a 1&1/2 Tablespoon capacity cookie scoop, drop dough onto ungreased baking sheets. Bake for 9 minutes.
