Gluten Free Peanut Butter Fudge


This recipe is an oldie but a goodie…I’ve been making it since I was a teenager. Most of the time I make fudge using chocolate chips of some sort, but this recipe is unique in that it uses only peanut butter for the base.  I also add pure Madagascar Bourbon vanilla extract for extra flavor. This makes a very creamy treat that isn’t overly sweet. The fudge is also gluten free, which is perfect for anyone dealing with celiac issues.

Serves: 36
  • 2 cups granulated sugar
  • ½ heaping cup whole milk
  • 1&1/3 cups Jif peanut butter
  • 7 oz. container Kraft marshmallow creme
  • 1 teaspoon pure Madagascar Bourbon vanilla extract
  1. In a medium saucepan, stir together the sugar and milk. Cook over medium heat, stirring constantly, until mixture comes to a rolling boil. Cook, while stirring constantly, for 3 minutes.
  2. Remove saucepan from heat. Add the peanut butter and stir until smooth. Quickly add the marshmallow creme and vanilla, stirring until smooth.
  3. Pour hot fudge into greased 9 inch square pan. Chill in refrigerator to set. When firm, cut into pieces and store in an airtight container.
